米線及配料處理方法:
- 酸菜洗淨後,浸水30分鐘去除多餘鹽分。擠出多餘水份後,切塊備用,不用再烹調。

- 湯鍋中加入半鍋水,加入少量鹽。水滾後加入米線煮約13至14分鐘,可抽一條米線試試口感。如米線已煮熟透,即可撈起米線瀝乾水份備用。

- 免治豬肉 300克
- 豆瓣醬 1.5湯匙
- 茄汁 兩湯匙
- 鎮江醋 1茶匙

- 免治豬肉於平底鑊中炒至八成熟。

- 試味,按喜好調節鹹甜。花田沒有再落鹽,覺得豆瓣醬鹹味已足夠。
- 加入適量水份,水份剛剛蓋過肉醬。 視乎加入的水量,炆煮5-15分鐘至收汁即成。
三小辣麻辣湯底材料:
- 水 約1200毫升
- 豬骨味濃湯寶 兩粒
- 雞粉 1湯匙
- 鹽 1茶匙 (按喜好調節)
- 辣椒粉 1湯匙
- 淡奶 兩湯匙
- 花椒油 1湯匙
做法
- 湯鍋煲滾1.2公升水,加入濃湯寶拌勻。
