材料
- 梅菜 1棵
- 免治豬肉 300g
- 蔥花 適量 (非必要)
- 熟油 適量 (非必要)
調味料
- 生抽 1湯匙
- 老抽 1茶匙
- 米酒 1茶匙
- 清水 1湯匙
- 糖 1茶匙
- 雞粉或鹽 半茶匙
- 粟粉 1½茶匙
- 麻油 1茶匙
做法
- 梅菜用清水浸泡15分鐘。多次清洗乾淨後瀝乾水分,切碎備用。
- 耙鬆免治豬肉。除粟粉及麻油外,先後加入所有調味料拌勻。拌入粟粉,再以麻油包裹。
- 將已切碎的梅菜拌入免治豬肉中。
- 把已醃好及拌勻免治豬肉撫平在蒸碟上。
- 大火蒸15分鐘即成。喜歡的話,可以灑上蔥花及灒上適量熟油。
