材料
- 瘦肉 210克
- 肥肉(脂肪)90克
- 鹹蛋黃 1隻
醃料
- 生抽 1湯匙
- 水 兩茶匙
- 糖 ⅔茶匙
- 粟粉 兩茶匙
- 麻油 ⅔茶匙
做法
- 將瘦肉及脂肪切片,切條,再切粒,再分別剁成蓉,撈勻混合。
- 加入生抽及水,拌勻至液體全被吸收。再拌入糖、粟粉,最後加入麻油包裹。醃約15分鐘。
- 將豬肉平均舖在碟上,中間壓出一個凹位,倒入鹹蛋黃。
- 大火蒸肉餅約15分鐘至全熟即成。食用時有需要才加入豉油調味。
