材料
- 烏冬 1個
- 洋蔥 半個 (切絲)
- 青辣椒 1條(去籽,切絲)
- 紅辣椒 1條(去籽,切絲)
- 已熟雞胸肉 1塊(切絲)
調味料
- 海南雞飯豉油 1湯匙
- 美極鮮醬油 半至1茶匙
- 麻辣紅油 1-2茶匙
做法
- 烏冬浸在剛煲滾熱水中幾分鐘,然後用筷子鬆開及瀝乾水分。
- 以中大火在炒鑊中爆香洋蔥絲至微黃色,甚至帶焦香。加入烏冬,略炒。
- 拌入海南雞飯豉油及美極鮮醬油,再加入雞絲兜勻。
- 加入青、紅辣椒絲及麻辣紅油炒勻。試味再判斷是否需要調節調味或略炒一會。如味道、口感俱佳,即可熄火上碟。
