材料
- 珍寶虎蝦 12隻
- 薑 兩湯匙(切粒)
- 蒜蓉 兩湯匙
調味料(醬汁)
- 茄汁 兩湯匙
- 喼汁 兩湯匙
- 生抽 兩茶匙
- 老抽 1茶匙
- 糖 兩茶匙
- 水 兩湯匙
*另備鹽水洗蝦用
做法
- 蝦剪去蝦槍、蝦鬚和蝦腳後,去除蝦腸。用鹽水洗蝦表面,清水冲洗後,瀝乾水份並用廚房紙印乾。
- 將所有調味料拌勻成醬汁備用。
- 熱鑊落油,半煎炸蝦每邊兩、三分鐘,撈起瀝乾油分。炸過蝦的油(下稱「蝦油」)隔渣留用。
- 原鑊加入兩茶匙蝦油,爆香薑米及蒜蓉,倒入漿汁炒勻。
- 蝦回鑊,兜勻直至每隻蝦表面都沾滿醬汁即成。
